Mini Cherry Pies

The Fourth of July is my absolute favorite holiday and I get excited each and every year when the time rolls around for me to start planning our celebration.  Anything red, white and blue or that is covered with stars seems to make its way into my decor and recipes and if I am honest, I will tell you that I adore it all.  So while I was testing out recipes for our dessert, I fell in love with these little mini cherry pies with a star cutout on top.

I went the super simple route when making these and purchased refrigerated pie crust as well as canned cherry pie filling.  I am so glad that I did because the pies took me just over thirty minutes to make from start to finish.

Using a drinking glass as a “cookie cutter” I traced around it with a sharp knife to form my circle.  I placed each circle into a muffin tin (no need to spray with non stick cooking spray – they’ll pop right out after baking).

You can use the bottom of the glass to help push the dough into the muffin tin (if you use your dough carefully and roll out the excess you should get about 10 pies from one box of dough).  Fill each pie crust almost to the top.  Then using a star shaped cookie cutter, cut one star for each pie and place it directly on top.

Brush the top of each pie with egg white and sprinkle sugar on top.  Bake at 375* for 20 minutes or until the crusts are golden brown.

In my mind, these should be eaten with a big ol’ scoop of vanilla ice cream, but they are also great as a walking dessert.  Delicious, easy to make and perfectly patriotic.  A great combo to enjoy for your Fourth celebration, or really anytime!
