Paleo and Gluten Free 3 Ingredient Crepes

Back in March of last year my hubby and I decided that we would do a strict 30 day Paleo cleanse.  It was a great experience and I learned a lot about my eating habits, but let me tell you; it was so very tough to go from eating whatever I pleased to eating mainly meat and veggies.  Really tough.  The kind of tough that made me feel as though I was losing my mind at times.  The hardest things for me to give up were dairy and bread.  Breakfast became the most challenging meal of the day for me because there are only so many ways that you can prepare bacon and eggs.  All of the ususal breakfast foods are a big Paleo no no, so cereal, pancakes, cinnamon rolls, waffles and all of my other favorite standbys were a no go.  It was heartbreaking for me.  That is, until I tinkered with the idea of a Paleo crepe.  Of course I wasn’t able to use a cream cheese filling, but I found that adding some almond butter and fruit made for an absolutely delicious meal.  And really, if it looks this pretty how can it be anything other than scrumptious?!

I had never really made crepes before, always thinking that they were too complicated or that I would need fancy equipment that I didn’t own.  Totally not true!  I make my crepes in a non-stick frying pan, using only a rubber spatula to turn it with.  And you only need three ingredients!  Could not be easier!

Ingredients
  • 1 egg
  • 1 Tbsp Arrowroot powder (can substitute with corn starch - will not be Paleo)
  • 1 Tbsp water
Instructions
  1. Whisk together egg, arrowroot powder and water; set aside. In a non-stick frying pan heat a small amount of coconut oil over medium high heat (could also use butter or non-stick spray, but it will not be Paleo). Slowly pour the egg mixture into the pan, swirling to ensure that the mixture covers the entire bottom of pan. Cook until edges come up easily from side of pan; about two minutes. Flip over and cook for an additional two minutes.

The filling choices are pretty endless and you can be daring and drizzle it with some warm chocolate almond butter to take it to the next level.

And even though I am no longer on a strict Paleo diet, you’d better believe that these crepes still make an appearance in my home all too often!

  3. These look awesome! I love that it’s so easy! Corn starch is gluten free btw so if you use that as a substitute it’s still gluten free! 😉 can’t wait to try them out!!

  5. Made these this morning after pinning them last night! OMG so awesomely good! Even my picky kid-eaters gobbled them up and asked for more 🙂 I actually took a bit of cocoa powder an mixed it with stevia powder to sprinkle in and on top: fabulous!!

  6. Hi there awww crepes something I love so much. I like them sweet or savory. Nice to see you have them gluten free not full of flour/wheat. I thought grass fed butter was Paleo therefore OK to use. Bit confused there. I cannot do coconut anything major allergy for me so I guess butter it is for me. Thank you for sharing this, this is so easy.

    • TeaJae, it seems to vary with which lists you are going off of as to whether or not grass fed butter is considered paleo. Ghee is also debated in the paleo community. I chose to simply say that butter would not be paleo to try to avoid upsetting either side. If you are allergic to coconut oil, I think that you would be just fine using either grass fed butter or ghee. I hope that you try the crepes, please let me know if you do.

  7. These are amazing! For those of you who haven’t tried this, you MUST! I cannot say enough good things about this recipe! I have Celiac disease and miss dessert. This crepe is perfect… It makes a single serving just for me, i don’t have a bunch of GF leftover desserts that will most likely go bad before i can eat them and it calls for only 3 ingredients! I love how fast it is to make one! I like to fill mine with a little Nutella and some strawberries or bananas. Perfect recipe! Thank you!
